The Lactose Refractometer is a quick and efficient tool for measuring soluble solids in lactose. In young mammals, the intestines produce lactase to break down lactose into monosaccharides. However, in adults, including most humans except Caucasians, lactase activity significantly decreases, leading to lactose intolerance. This condition can cause symptoms like bloating and diarrhea after consuming dairy products.

Human milk contains approximately 7% lactose, while cow's milk has around 4.2%, and goat's milk contains about 4.6%. Compared to sucrose, lactose is less sweet, with only about one-sixth of the sweetness of cane sugar.
